What is Whey Protein?

We’ve all heard of Little Miss Muffet, “eating her curds and whey”.  When we make cheese, we separate the ingredients of milk into the solid from the liquid parts.  The ‘curd’ is the solid (we would make cheese and butter with curd) and the liquid is the ‘whey’.  The whey can then be reduced and turned into a powder, rich in many proteins.
